Yes, we Marylanders are know for our CRABS. We enjoy them in may ways. The most common is steamed, and crab cakes. There are so many other ways that we eat them. But this time of year we love to curl up with is hot bowl of cream of crab soup and some good bread. This soup is made many ways but I will share my recipes with you.
Ingredients:
1 lb of crab claw meat (it has more flavor then the lump meat that most people use)
1 stick of butter
2 tablespoons of cornstarch
1 quart of heavy wiping cream
1 cups of milk
3 tablespoons of Old Bay or add to taste (must have, will make a huge difference)
Step 1
Make a basic rue.
Place a large pot on the stove. Heat to Med. low. Place butter in pot stir until it has melted. Now add the cornstarch. Blend well. You want a nice smooth, creamy, and thick consistency. Make sure that the heat is not to high this soup can burn easily.
Step 2
Now you want you soup to be creamy not watery looking.
Add the quart of heavy wiping cream. Mix in well. Now add the milk, and continue to stir.
Bring the soup to where it is hot. Be careful not to bowel to long it may burn. Let is set for a few min.
You can adjust the thickness by adding ether cornstarch, cream or milk.
Cornstarch will thicken it, and cream or milk will thin it down.
Step 3
Add the Old Bay and stir it in well. Now add the crab meat. Let it heat through while gently stirring. Once the crab is hot enjoy.
Nice and simple recipe. One forewarning the soup is so rich that you may skip dinner after having this.
